Each and every Sunday, I try to sit down and prepare a list (OK - admittedly, most of the time it’s just a mental list) of what the upcoming week’s general meal plan looks like. With this being the week before Christmas, I was trying to figure out how to make each meal a little more festive, a little more cheery, and just a little more exciting than usual.

In my family, Christmas Eve and Christmas Day are both filled with tons and tons of excessive food, most of which isn’t exactly incredibly healthy. So in the days leading up to all this excessive eating, I really wanted to try to eat as wholesomely as possible while also getting as much nutrients as I can.

So, without further ado, below is my official “’Twas The Week Before Christmas” meal agenda.  And of course, we Meatless Monday bloggers from The Voice wish you a very Merry Christmas!

Friday

This is the evening I’m hosting a potluck dinner at my house with several girlfriends, so I plan on preparing:

Spiced Holiday Sangria (of course, it wouldn’t be a party without it)

Spicy Vegetarian Quiche

Guacamole and Salsa

Tomato Basil Mozzerella Skewers
