I have a confession.

I am slightly obsessed with pumpkins. Not so much for decoration, although the ones currently decorating my front porch are really pretty and festive, but I’m talking food here - vegetarian food, to be precise.

Fact: veggie burgers are a vegetarian’s best friend. They’re high in protein and fiber, low in fat, and packed with mouth-watering flavor. Plus, they’re good – I mean really good – no matter what extra ingredients you throw on top of them. Avocado? Yep. Mushrooms? For sure. Jalepenos? Absolutely. Seriously now, what’s not to love?

Now that school is back in full swing, and routines are being established again, you might be thinking it a little difficult to continue participating in Meatless Monday. After all, if you’re trying to pack that brown paper bag for the kids, and then one for yourself before heading out the door, it might seem easier to just layer turkey and mayo between two pieces of bread than try to come up with a tasty and nutritious vegetarian alternative.
